  • 4 fillets of fish (haddock or cod)
  • 1 onion
  • 1 lemon
  • 1 teaspoon chopped parsley
  • 20 grams butter, plus more for frying the onions
  • 80 grams panko breadcrumbs
  • 100ml white wine
  • chilli flakes


  • Mix the panko breadcrumbs, parsley and the finely grated zest of the lemon in a bowl
  • Mix in the melted butter and the juice of half the lemon
  • Peel and thinly slice the onion and fry gently in a little butter until soft but not coloured.
  • Add the white wine and the juice of the other half of the lemon, and simmer for a minute or two
  • Distribute the onion mixture between 4 shallow oven-proof dishes, and sprinkle a few chilli flakes into each dish
  • Lay the fish fillets on top of the onion mixture, and sprinkle over the breadcrumb mixture
  • Bake in a preheated oven at 200 C for 20 minutes until the fish is cooked through and the breadcrumbs are golden brown
