Scrod
Ingredients
- 4 fillets of fish (haddock or cod)
- 1 onion
- 1 lemon
- 1 teaspoon chopped parsley
- 20 grams butter, plus more for frying the onions
- 80 grams panko breadcrumbs
- 100ml white wine
- chilli flakes
Method
- Mix the panko breadcrumbs, parsley and the finely grated zest of the lemon in a bowl
- Mix in the melted butter and the juice of half the lemon
- Peel and thinly slice the onion and fry gently in a little butter until soft but not coloured.
- Add the white wine and the juice of the other half of the lemon, and simmer for a minute or two
- Distribute the onion mixture between 4 shallow oven-proof dishes, and sprinkle a few chilli flakes into each dish
- Lay the fish fillets on top of the onion mixture, and sprinkle over the breadcrumb mixture
- Bake in a preheated oven at 200 C for 20 minutes until the fish is cooked through and the breadcrumbs are golden brown
