Chocolate Brownies

Makes 20

Ingredients

  • 300 grams dark chocolate
  • 300 grams butter
  • 5 eggs
  • 1 tbsp vanilla extract
  • 450 grams sugar
  • 200 grams plain flour
  • 1 teaspoon salt

Method

  • Preheat the oven to 180C conventional/160C fan, and line a 20 x 30 cm deep-sided baking tray or roasting dish with baking paper
  • Melt the butter and chocolate together in a bowl: either over a pan of simmering water and stirring constantly, or using a microwave and stirring at 30 second intervals, until the butter and chocolate have just melted - do not overheat!
  • Whisk the eggs, sugar and vanilla extract together in a separate, large bowl until pale and fluffy – use a food mixer or electric whisk if you have one
  • Carefully add the chocolate and butter mixture to the egg and sugar mixture and mix together
  • Add the flour and salt and mix together until smooth
  • Pour the mixture into the lined baking tin and spread it out evenly
  • Bake for 20 - 30 minutes depending on how gooey you like your brownies
  • Allow to cool in the tin for 10-15 minutes before cutting into squares
